Yogurt biscuits in 20 minutes

We didn't have any bread left for dinner so I found this recipe that takes the shortest time to make. It turned out very delicious.

The recipe is from Mark Bittman's recent book "How to cook everything vegetarian", which I ordered from Amazon along with MM's birthday present :)

2 cups of all-purpose flour or cake flour (if extra-soft crumb preferred), I used all-purpose
1 scant teaspoon salt
1 tablespoon baking powder
1 teaspoon baking soda
2 to 5 tablespoon of cold butter, I used olive oil instead for a low cholesterol version
7/8 cup yogurt

To cook

Preheat the oven for 450 F
Mix all the ingredients together
Press the dough into a 3/4 inch-thick rectangle and cut into 2-inch rounds.
Bake the rounds for 7~9 minutes or until the biscuits turn into golden brown.

Serve within 15 minutes!

This is really easy and not much kneading is required either. The only thing to remember is to preheat the oven early enough so that it reached the ideal temperature when the rounds are ready to be cooked. I mixed some black sesame seeds/rosemary in the dough and both were good. The best part though, it is the soft and flaky texture!
