We brought a mullet yesterday but neither of us had it before. It was fresh and also one of the cheapest so it doesn't hurt to give it a try. MM remains rather skeptical though--we brought a whole salmon at the same place (Belconnen fish market) before and that was horrible--he hasn't got over that fishy episode yet.
I decided to use minimum effort to cook it as well, in case we have to throw it away. So microwave cooking is the natural choice.
The key of cooking with microwave is that you have to do all the work beforehand, in this case, marinating. I started cleaning and massaging the fish with salt and pepper rightly after lunch. The mullet has a high flesh/bone ratio so I cut several grooves and also stuck salt and pepper inside. After that I left the fish in a red wine & soy sauce bath.
Rightly before cooking I added green onion and ginger bits inside the fish, covered it with plastic wrap then it was ready to go. 3.5 minutes was all it needed.
When the fish was cooking, I heated a mixture of canola oil, honey, hot pepper "from the garden" and more ginger and onion pieces. This mixture was sprinkled onto the fish as soon as it came out of the microwave. Done!
Oh, almost forget to mention. I also decorated the fish with several sprigs of cilantro. Looks nicer, that's all. The picture doesn't do justice of my final product because I didn't use flash.
The mullet tasted really good, and even better, it doesn't have tiny bones. Big bones were the only thing left after 15 minutes, and the happy bear even ate all the onion/ginger/cilantro bits...
