Why there is only one Chinese recipe

MM Mama is interested in getting recipes for Chinese food from me. My first response was, "there must be some on my blog." After researching posts with a "Yoyo nibbling" tag, I only found one ("Grandma's best stir-fried tomato, egg and cucumber"). This was a surprise--I sure cook Chinese food often but how come I haven't shared recipes with the world?

On a second thought this is because I don't need any recipe to cook Chinese food. For example, I don't have to remember how much salt is needed because I have a rough idea and I also taste the dish if I am not sure. Over-salted dishes? Surely it happened but mostly when we got a new type of salt or I was absent-minded. Besides I believe cooking is an art more than a science. I don't like to cook the same dish twice. I like to throw in new ingredients and see how things work.

But I understand this spirit of being adventurous doesn't help if one has never tasted or seen a dish before. My disastrous first-time-ever pudding is such an example. I do have heaps of recipe books but none is Chinese.

One incentive to write a recipe down is to share and now MM Mama gave me one. So stay tuned!

P.S. This also gave me an incentive to buy a kitchen scale. I didn't need one because all American recipes are volume-based.
