I somehow felt like making coconut rice to go with grilled salmon and stir-fried cabbage. After checking several recipes online, it seems rather troublesome to make. The existing recipes either requires mixing water and coconut milk or using a saucepan (instead of rice cooker). Here is a recipe I created and it is easiest ever!
1.25 cups of Jasmine rice
1 can of lite coconut milk (therefore, no need to mix water and coconut milk)
1 pinch of salt
1~2 tablespoon of dry coconut pieces
Rinse the rice three times and get rid of as much as water as possible for the last time. Pour in the lite milk, then add the salt and coconut pieces. Stir. Push the "cook" button. Sit back and relax!
It turned out pretty well and a perfect companion for the hot-and-sour cabbage!
