Soy falafel

I made these "falafel" with soy bean leftover from making soy milk. They taste rather like real falafel actually but the texture is a big off. As far as I remember falafel has bigger chickpea pieces, but the soy pieces are rather tiny in comparison.

These soy falafels were served as appetizer along with cucumber wedges. Why cucumber? I put a bit too much salt in the falafel so I thought cucumber might dilute the saltiness a bit ;)
