First time ever falafel from scratch


I made falafel before. But I cannot say I know how to make falafel until today. Because this time I in fact started from soaking chickpeas overnight; before the first step was to buy falafel mix.

I got a recipe from Mark Bittman and it turned out very well. It seems a lot better then the ones made from mix, at least I think so. The first thing MM said was "interesting", which normally is a bad sign. But this time he meant what it sounds--my falafel (as shown in the picture) is flat and normally they're nicely rounded.

This is because these falafel are not deep-fried. I pan-friend them so that we would not eat so much oil. In order to cook them evenly, I flattened them up before turning them over to the other side to cook.

By the way, the presentation here is supposed to be of a Halloween theme. I wasn't a big fan of Halloween when I was in the States. But I somehow miss it now; Australians don't have such a thing. They don't celebrate Thanksgiving either, which is really a pity. Thanksgiving was my favorite American holiday...
